Heat oil in sauté
pan, add shallots, chipotle and thyme.
Sauté till onions are translucent. Add
wine, salt, sugar and half of the
blackberries. Reduce wine to 1/3. remove
from heat and add the rest of the
blackberries. Taste and correct the
seasoning.
Crème Fraîche
- mix ingredients and let set at room
temperature for at least 1 hour.
Season and grill
salmon till medium.
