Grilled Sockeye with Blackberry Chipotle

INGREDIENTS

Yield: 4 Servings

4 8 oz filets of Sockeye

Seasoning - season salt or S&P

 

Sauce

1/8 cup chopped shallots

2 tsp v.o.o.

1/4 teaspoon sea salt

1/4 teaspoon chipotle powder

2 tablespoon sugar

1/2 teaspoon dried thyme

2 cups Little Bear Creek

2 cups blackberries

 

Crème Fraîche

1/4 cup sour cream

1/4 cup whipped cream


METHOD
Heat oil in sauté pan, add shallots, chipotle and thyme. Sauté till onions are translucent. Add wine, salt, sugar and half of the blackberries. Reduce wine to 1/3. remove from heat and add the rest of the blackberries. Taste and correct the seasoning.
 
Crème Fraîche  - mix ingredients and let set at room temperature for at least 1 hour.
 
Season and grill salmon till medium.
 

ASSEMBLY
Plate salmon top with blackberry sauce then ad a dollop of the Crème Fraîche
