Asian Salad

DESCRIPTION



Sweet pea salad, with lichee vinaigrette and Chinese gooseberries.

INGREDIENTS

Yield: Serves 4.

Salad:
1 bunch fresh lichee or canned lichees
1 bunch pea shoots with tops
12 pieces snow pea, cut into fine julienne
1 medium carrot, cut into fine julienne
1 medium gold beet, cut into fine julienne
12 chinese gooseberries, leaves pulled back on 6, leaves removed on 6
12 lichees, seed removed

Vinaigrette:
1/4 cup lichee juice
1/4 cup rice wine vinegar
1/4 cup canola oil
1 tsp salt
1 tsp white sesame seeds
1 tsp black sesame seeds
1 pinch Chinese 5 spice

METHOD

1. Prepare all vegetable ingredients except for 6 gooseberries, toss lightly in a large bowl.
2. Whisk all ingredients for vinaigrette together in a small bowl.
3. Add vinaigrette to large bowl and toss salad.
 

ASSEMBLY

Serve in individual salad portions, and garnish with 1 gooseberries with leave pulled back per serving.
